The oven came first
Forno Alto is built around one wood-fired oven at the back of a narrow shop in Bonfim. The fire is lit before dawn, and everything on the shelves is baked in it that same morning.
Our breads are leavened with a long-kept sourdough starter and given a slow, cool rise overnight. That makes a deep crust, an open crumb and bread that keeps for days.
We bake a set amount each morning. When it is gone, we close, which is why we take reservations: a loaf with your name on it is set aside before the door opens.
- Fire lit, oven left to soak up the heat
- Embers raked out, first loaves on the peel
- Door opens; pastries and coffee
- Closing time, or earlier if we sell out
