One oven, one bake a day
Forno Alto is built around its oven: a brick dome, fired with wood, at the back of a narrow shop on Rua do Heroísmo. It holds one bake a day, so that is what we make.
Each morning's dough is mixed the afternoon before and left to ferment slowly overnight: flour, water, salt and a starter we feed every day. The fire goes in before five, and the first loaves come out as we open the door at half past seven.
We don't run a second bake when the shelves empty. Some days that means closing before two. It's also why we take reservations: if you want a particular loaf, we set it aside before the door opens.
A baking day
- Fire lit. The dome takes about two hours to come to heat.
- Loaves go in, then pastries as the heat drops.
- Door opens, coffee on, first loaves on the shelf.
- Closed — earlier if we've sold out.
- Tomorrow's dough is mixed and left to ferment.
- Reservations for tomorrow close.
